This slow cooker chipotle chicken recipe is perfect for spice lovers. The chicken is marinated in a delicious chipotle sauce, then cooked slowly in a crock-pot, resulting in tender and flavorful meat. Serve it with warm tortillas, rice, and beans for a complete Mexican-inspired meal.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce (from the chipotle peppers can)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Directions

  1. In a large bowl, combine the minced chipotle peppers, adobo sauce, olive oil, diced onion, minced garlic, cumin, oregano, smoked paprika, salt, and black pepper. Mix well.
  2. Add the chicken thighs to the bowl and toss them in the chipotle marinade until well coated. Cover the bowl and let the chicken marinate in the fridge for at least 1 hour, or overnight for best results.
  3. Heat a skillet over medium-high heat and add the marinated chicken thighs. Cook for 2-3 minutes on each side, until they get slightly browned.
  4. Transfer the chicken from the skillet to a slow cooker. Pour in the chicken broth and lime juice.
  5. Cover the slow cooker and cook on low heat for 4 hours, or until the chicken is cooked through and tender.
  6. Once the chicken is cooked, use two forks to shred the meat in the slow cooker. Mix the shredded chicken with the juices in the slow cooker to ensure it is well coated.
  7. Serve the slow cooker chipotle chicken hot, garnished with fresh cilantro. Enjoy with warm tortillas, rice, and beans.
