Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into small cubes
- 1 onion, diced
- 2 cloves garlic, minced

- 1 can (15 ounces) diced tomatoes
- 4 cups chicken broth
- 1 cup long-grain white rice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste

Directions
- In a large pot, heat the olive oil over medium heat. Add the chicken cubes and cook until browned on all sides. Remove the chicken from the pot and set aside.

- Add the diced green chiles, diced tomatoes (with their juice), chicken broth, rice, cumin, and chili powder to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce heat to low and cover the pot. Simmer for 20-25 minutes, or until the rice is cooked and tender.

- Season the soup with salt and pepper to taste. Garnish with freshly chopped cilantro before serving.
- Serve the Green Chile Chicken and Rice Soup hot with warm tortillas or crusty bread.
