Ingredients

  • 4 chicken thighs, bone-in, skin-on
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup chopped tomatoes
  • 1/2 cup dried apricots, chopped
  • 1/2 cup pitted green olives
  • 1/4 cup toasted almonds, chopped
  • Chopped fresh cilantro, for garnish

Directions

  1. In a small bowl, combine the cumin, coriander, cinnamon, ginger, turmeric, salt, and pepper. Rub the spice mixture all over the chicken thighs and let marinate for at least 30 minutes.
  2. Heat olive oil in a tagine or large skillet over medium-high heat. Add the chicken thighs and brown on both sides, about 5 minutes per side. Remove the chicken and set aside.
