Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb chicken thighs, cut into bite-sized pieces
- 1 onion, diced
- 1 red bell pepper, diced

- 1 cup long grain rice
- 2 cups chicken broth
- 1 can diced tomatoes

Directions
- In a large paella pan or skillet, heat olive oil over medium heat.
- Add chicken thighs and cook until browned on all sides. Remove from pan and set aside.

- Return chicken to the pan and let cook for 10 minutes.
- Add shrimp to the pan and cook for an additional 5-7 minutes until shrimp is pink and cooked through.
- Remove from heat and let sit for 5 minutes before serving.
