This Cajun paella combines the traditional flavors of Spanish paella with the spicy and bold flavors of Cajun cuisine. The result is a dish that is rich, flavorful, and satisfying. Perfect for a family dinner or entertaining guests.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Olive oil for cooking

Directions

  1. In a large paella pan or skillet, heat olive oil over medium heat.
  2. Add chicken thighs and cook until browned on all sides. Remove from pan and set aside.
  3. In the same pan, add more olive oil if needed and sauté onion, bell peppers, and garlic until softened.
  4. Stir in rice, paprika, cayenne pepper, thyme, and oregano. Cook for 2-3 minutes until rice is coated with spices.
  5. Add diced tomatoes, chicken broth, salt, and pepper. Bring to a simmer.
  6. Return chicken to the pan and let cook for 10 minutes.
  7. Add shrimp to the pan and cook for an additional 5-7 minutes until shrimp is pink and cooked through.
  8. Remove from heat and let sit for 5 minutes before serving.
  9. Garnish with fresh parsley and lemon wedges before serving.
