Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, mix together the pumpkin puree, sugars, oil, eggs and vanilla until smooth.
  3. In a separate bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Slowly stir the dry ingredients into the wet ingredients until just blended.
  5. Pour the batter into the prepared pan.
  6. Bake for 40 to 45 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Let cool before slicing.
