Ingredients
- 1/2 pound of spaghetti
- 1/2 cup of sliced almonds
- 2 tablespoons of olive oil
- 1 clove of garlic, minced
- 1 medium zucchini, sliced
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of chopped fresh parsley
Directions
- Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook until al dente, about 8-10 minutes.
- While the spaghetti is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 2 minutes, stirring occasionally.
- Add the zucchini and almonds to the skillet and cook, stirring occasionally, until the zucchini is tender but still crisp, about 5 minutes.
- Drain the spaghetti and add it to the skillet. Stir in the salt and pepper and cook for 1 minute.
- Stir in the parsley and serve immediately.
