Ingredients
- 4 slices bacon, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 potatoes, peeled and diced
- 1 cup heavy cream
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Directions
- In a large pot, cook bacon over medium heat until crisp. Remove bacon with a slotted spoon and set aside.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Add chicken broth and potatoes and bring to a boil. Reduce heat and simmer for 10 minutes, or until potatoes are tender.
- Add heavy cream and stir until combined.
- Season with salt and pepper, to taste.
- Garnish with bacon and parsley, if desired.
