1 small onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced

Add the beaten eggs and stir continuously to scramble the eggs until cooked through, about 2 minutes.
Remove from heat and let cool slightly.
Warm the tortillas in a dry skillet over medium heat, about 1 minute per side.
Divide the egg mixture among the four tortillas and top each with 1/4 cup of the shredded cheese.
Fold the sides of the tortilla over the filling and roll up to form a burrito.
Serve warm with desired toppings.
