Ingredients
- 1 cup basmati rice
- 1 tablespoon olive oil
- 1 onion, diced
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- 1 cup sliced mushrooms
- 1 cup frozen peas
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups vegetable stock
Directions
- In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring, until the vegetables are softened, about 5 minutes.
- Add the cumin and cook, stirring, for 1 minute.
- Stir in the mushrooms and peas and cook until the mushrooms are softened, about 5 minutes.
- Stir in the rice, salt, pepper, and vegetable stock. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes.
- Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and serve.
