Ingredients

  • 1 cup basmati rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1 cup sliced mushrooms
  • 1 cup frozen peas
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups vegetable stock

Directions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring, until the vegetables are softened, about 5 minutes.
  2. Add the cumin and cook, stirring, for 1 minute.
  3. Stir in the mushrooms and peas and cook until the mushrooms are softened, about 5 minutes.
  4. Stir in the rice, salt, pepper, and vegetable stock. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes.
  5. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and serve.
