Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup frozen corn
  • 1 cup vegetable broth
  • 8 ounces uncooked fusilli or penne pasta
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheddar cheese

Directions

  1. In a large skillet, heat oil over medium heat.
  2. Add onion and garlic; cook and stir until onion is tender, about 5 minutes.
  3. Stir in chili powder, cumin, oregano, salt, and pepper. Add beans, tomatoes, corn, and broth; bring to a boil.
  4. Reduce heat; simmer, uncovered, for 10 minutes.
  5. Stir in pasta; cook, uncovered, until pasta is tender, about 10 minutes.
  6. Stir in cilantro; cook until heated through, about 2 minutes.
  7. Sprinkle with cheese.
