Ingredients

  • 2 cups rye flour
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon active dry yeast
  • 1 cup cold water
  • 2 1/2 cups sourdough starter
  • 1 tablespoon honey

Directions

  1. In a large bowl, combine the rye flour, all-purpose flour, salt, and yeast.
  2. Add the cold water, sourdough starter, and honey and mix until a soft dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let rise for about 2 hours.
  5. Turn the dough out onto a lightly floured surface and shape into a loaf.
  6. Place the loaf on a greased baking sheet and let rise for about 1 hour.
  7. Preheat the oven to 375°F (190°C).
  8. Bake the bread for 40-45 minutes, or until golden brown.
  9. Remove the bread from the oven and let cool before serving.
