Ingredients
- 1 cup rolled oats
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 1/4 teaspoon salt
- 1/3 cup butter, melted
- 1 cup semi-sweet chocolate chips
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 cups milk
- 2 tablespoons butter
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie plate.
- In a medium bowl, combine oats, flour, brown sugar, and 1/4 teaspoon salt. Stir in melted butter until evenly blended. Press mixture into prepared pie plate.
- Bake in preheated oven for 12 minutes. Cool on a wire rack.
- In a medium saucepan over medium heat, melt the chocolate chips, stirring constantly. Remove from heat, and cool slightly.
- In a medium bowl, whisk together the granulated sugar, cornstarch, and 1/4 teaspoon salt. Gradually whisk in milk until smooth. Stir in butter and vanilla. Pour mixture into the saucepan with melted chocolate chips, stirring constantly.
- Bring to a boil over medium heat. Reduce heat to low, and simmer until thick, about 8 minutes. Pour filling into cooled crust.
- Refrigerate pie for at least 2 hours before serving.
