In a large bowl, combine grated sweet potatoes, sugar, flour, cinnamon, nutmeg, and salt. Stir in milk, butter, eggs, and vanilla extract until well combined.
Pour mixture into prepared baking dish. Bake for 25-30 minutes, or until pudding is set and lightly golden brown.
