- 2 cups grated sweet potatoes

Directions
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a large bowl, combine grated sweet potatoes, sugar, flour, cinnamon, nutmeg, and salt. Stir in milk, butter, eggs, and vanilla extract until well combined.
- Pour mixture into prepared baking dish. Bake for 25-30 minutes, or until pudding is set and lightly golden brown.
- Serve warm or cold.
