Ingredients

  • 1 boneless pork loin, about 2 pounds
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F (190°C).
  2. Rub pork loin with olive oil, minced garlic, oregano, thyme, and rosemary. Sprinkle with salt and pepper to taste.
  3. Place pork in a roasting pan and bake in preheated oven for 45 minutes, or until internal temperature of pork is 145°F (63°C).
  4. Remove from oven, cover with foil, and let rest for 10 minutes before slicing and serving.
