Ingredients

  • 1 whole chicken
  • 2 tablespoons of olive oil
  • 2 tablespoons of butter
  • 1/2 cup of diced onion
  • 3 cloves of garlic, minced
  • 3 carrots, diced
  • 2 stalks of celery, diced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1 teaspoon of dried oregano
  • 1 bay leaf
  • 6 cups of chicken broth
  • 1/2 cup of white wine
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of all-purpose flour
  • 1/4 cup of cold water
  • 2 tablespoons of fresh parsley, chopped

Directions

  1. In a large pot over medium heat, heat the olive oil and butter.
  2. Add the onion, garlic, carrots, and celery, and cook until softened, about 5 minutes.
  3. Add the thyme, paprika, oregano, and bay leaf, and cook for 1 minute.
  4. Add the chicken broth, white wine, salt, and pepper, and bring to a simmer.
  5. Add the chicken and cook for 15 minutes. Remove the chicken from the pot and set aside.
  6. In a small bowl, whisk together the flour and cold water until smooth.
  7. Slowly stir the flour mixture into the soup and bring to a simmer.
  8. Add the homemade noodles and cook for 10 minutes, or until the noodles are cooked through.
  9. Add the chicken back to the pot and cook for 5 minutes.
  10. Garnish with fresh parsley and serve.
