Ingredients
- 1 whole chicken
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 1/2 cup of diced onion
- 3 cloves of garlic, minced
- 3 carrots, diced
- 2 stalks of celery, diced
- 1 teaspoon of dried thyme
- 1 teaspoon of paprika
- 1 teaspoon of dried oregano
- 1 bay leaf
- 6 cups of chicken broth
- 1/2 cup of white wine
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 cup of all-purpose flour
- 1/4 cup of cold water
- 2 tablespoons of fresh parsley, chopped
Directions
- In a large pot over medium heat, heat the olive oil and butter.
- Add the onion, garlic, carrots, and celery, and cook until softened, about 5 minutes.
- Add the thyme, paprika, oregano, and bay leaf, and cook for 1 minute.
- Add the chicken broth, white wine, salt, and pepper, and bring to a simmer.
- Add the chicken and cook for 15 minutes. Remove the chicken from the pot and set aside.
- In a small bowl, whisk together the flour and cold water until smooth.
- Slowly stir the flour mixture into the soup and bring to a simmer.
- Add the homemade noodles and cook for 10 minutes, or until the noodles are cooked through.
- Add the chicken back to the pot and cook for 5 minutes.
- Garnish with fresh parsley and serve.
