Ingredients
2 large sweet potatoes
1/2 cup almond meal
1/4 cup chopped fresh herbs (such as parsley, basil, oregano, thyme)

Directions
Preheat oven to 375°F.
Prick sweet potatoes with a fork. Place on a baking sheet and bake for 40 minutes, until softened.
