Ingredients
- 2 large sweet potatoes
- 1/2 cup almond meal
- 1/4 cup chopped fresh herbs (such as parsley, basil, oregano, thyme)
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons olive oil
Directions
- Preheat oven to 375°F.
- Prick sweet potatoes with a fork. Place on a baking sheet and bake for 40 minutes, until softened.
- Let cool for 10 minutes. Peel potatoes and place in a large bowl.
- Add almond meal, herbs, salt, and pepper. Mash with a potato masher until combined.
- Form mixture into 1-inch balls and place on a baking sheet.
- Brush balls with olive oil. Bake for 20 minutes, until golden brown.
- Serve warm or at room temperature.
