Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen corn
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 can black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro, for garnish
Directions
- In a medium saucepan, bring quinoa and vegetable broth to a boil. Reduce heat and simmer, covered, for 15 minutes, or until quinoa is cooked through.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until onion is softened, about 5 minutes.
- Add bell pepper, zucchini, corn, cumin, chili powder, and smoked paprika, and cook until vegetables are softened, about 10 minutes.
- Stir in black beans and cooked quinoa, and season with salt and pepper, to taste.
- Serve warm, garnished with fresh cilantro.
