Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup frozen corn
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 can black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. In a medium saucepan, bring quinoa and vegetable broth to a boil. Reduce heat and simmer, covered, for 15 minutes, or until quinoa is cooked through.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until onion is softened, about 5 minutes.
  3. Add bell pepper, zucchini, corn, cumin, chili powder, and smoked paprika, and cook until vegetables are softened, about 10 minutes.
  4. Stir in black beans and cooked quinoa, and season with salt and pepper, to taste.
  5. Serve warm, garnished with fresh cilantro.
