Ingredients
1 cup couscous
1 cup vegetable broth
1/4 cup olive oil
1/4 cup balsamic vinegar

Directions

Add the diced tomatoes, basil and onion to the bowl and stir until combined.
Add the couscous to the bowl and mix until everything is evenly coated.
Transfer the couscous to a serving bowl and top with the shredded mozzarella cheese.
Serve and enjoy!
