Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup diced red onion
  • 1/2 cup mozzarella cheese, shredded

Directions

  1. In a medium saucepan, bring the vegetable broth to a boil over high heat.
  2. Stir in the couscous and reduce the heat to low. Cover and simmer for 10 minutes.
  3. In a medium bowl, whisk together the olive oil, balsamic vinegar, salt and pepper.
  4. Add the diced tomatoes, basil and onion to the bowl and stir until combined.
  5. Add the couscous to the bowl and mix until everything is evenly coated.
  6. Transfer the couscous to a serving bowl and top with the shredded mozzarella cheese.
  7. Serve and enjoy!
