Spicy Edam Shrimp Quiche

Ingredients

  • 1 pound peeled and deveined shrimp
  • 1/2 cup diced onion
  • 1 cup grated edam cheese
  • 1/2 cup diced red pepper
  • 3 cloves garlic, minced
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 4 large eggs
  • 4 tablespoons butter
  • 1 9-inch prepared pie crust

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, melt butter over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
  3. Add the shrimp and cook for about 5 minutes, stirring often.
  4. Add the red pepper, cayenne pepper, oregano, black pepper, and salt and cook for an additional 3 minutes.
  5. Remove from heat and let cool.
  6. In a medium bowl, whisk together the milk, cream, and eggs until well blended.
  7. Sprinkle the cheese in the bottom of the prepared pie crust.
  8. Top with the shrimp mixture.
  9. Pour the egg mixture over the top.
  10. Bake in preheated oven for 30 minutes or until the quiche is set.
  11. Remove from oven and let cool before serving.
