Ingredients
- 1 package cauliflower gnocchi
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded vegan mozzarella cheese
- 1/4 cup chopped fresh basil, for garnish
Directions
- Preheat the oven to 425°F and lightly grease a baking sheet with cooking spray.
- Spread the cauliflower gnocchi onto the baking sheet and drizzle with olive oil.
- Sprinkle the garlic powder, oregano, salt and pepper over the gnocchi and toss to coat.
- Bake for 15 minutes, stirring once halfway through.
- Remove the baking sheet from the oven and reduce the oven temperature to 375°F.
- Spread the marinara sauce over the gnocchi and top with the vegan mozzarella cheese.
- Bake for an additional 10 minutes, until the cheese is melted and bubbly.
- Garnish with chopped fresh basil and serve.
