Ingredients

  • 1 package cauliflower gnocchi
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded vegan mozzarella cheese
  • 1/4 cup chopped fresh basil, for garnish

Directions

  1. Preheat the oven to 425°F and lightly grease a baking sheet with cooking spray.
  2. Spread the cauliflower gnocchi onto the baking sheet and drizzle with olive oil.
  3. Sprinkle the garlic powder, oregano, salt and pepper over the gnocchi and toss to coat.
  4. Bake for 15 minutes, stirring once halfway through.
  5. Remove the baking sheet from the oven and reduce the oven temperature to 375°F.
  6. Spread the marinara sauce over the gnocchi and top with the vegan mozzarella cheese.
  7. Bake for an additional 10 minutes, until the cheese is melted and bubbly.
  8. Garnish with chopped fresh basil and serve.
