- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup low-fat mayonnaise
- 1/4 cup chopped fresh parsley
- 4 large whole wheat wraps
- 2 cups fresh spinach leaves
- 1 large tomato, sliced
- 1/2 cup shredded cheese
Directions
- Preheat the grill to medium-high heat.
- In a small bowl, combine the olive oil, oregano, garlic powder, salt, and pepper. Rub the mixture onto the chicken breasts and set aside.
- In a medium-sized skillet, melt the butter over medium-low heat. Add the garlic and cook until fragrant, about 1 minute. Stir in the mayonnaise and parsley and mix until well combined.
- Grill the chicken breasts for 8-10 minutes, flipping once, until cooked through. Slice the chicken into strips.
- Lay the wraps on a flat surface. Spread each wrap with some of the mayonnaise mixture. Layer with spinach leaves, tomato slices, chicken strips, and cheese.
- Roll the wraps up and slice in half. Serve immediately.
