Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 large avocado, diced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup freshly squeezed lime juice
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a medium bowl, combine the corn, avocado, onion, cilantro, lime juice, cumin, salt and pepper.
  2. Toss to combine.
  3. Taste and adjust the seasoning if necessary.
  4. Serve chilled or at room temperature.
