Ingredients
- 2 cups fresh or frozen corn kernels
- 1 large avocado, diced
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup freshly squeezed lime juice
- 1/2 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
Directions
- In a medium bowl, combine the corn, avocado, onion, cilantro, lime juice, cumin, salt and pepper.
- Toss to combine.
- Taste and adjust the seasoning if necessary.
- Serve chilled or at room temperature.
