Ingredients

  • 7 egg yolks
  • 1/2 cup white sugar
  • 3/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups mascarpone cheese
  • 1/2 cup strong brewed espresso
  • 20-25 Italian ladyfingers
  • 1/4 cup rum
  • 2 tablespoons unsweetened cocoa powder

Directions

  1. In a medium bowl, whisk together egg yolks and sugar until thick and creamy.
  2. Heat milk in a medium saucepan over medium heat until steaming. Slowly pour the hot milk into the egg mixture, whisking constantly.
  3. Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until thick enough to coat the back of a spoon.
  4. Remove from heat and stir in the vanilla extract.
  5. Set aside to cool completely.
  6. In a medium bowl, combine the mascarpone cheese with the cooled egg mixture and mix until smooth.
  7. In a small bowl, combine the espresso and rum.
  8. Dip the ladyfingers into the espresso mixture, one at a time, and arrange in a 9x13 inch baking dish.
  9. Spread half of the mascarpone mixture evenly over the ladyfingers.
  10. Repeat the process with the remaining ladyfingers and mascarpone mixture.
  11. Dust the top of the Tiramisu with the cocoa powder.
  12. Refrigerate for at least 4 hours before serving.
