Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into small cubes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 avocado, peeled and pitted
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onion
  • 1/2 teaspoon lime juice

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5 to 7 minutes, stirring occasionally until chicken is cooked through.
  3. Stir in chili powder, garlic powder, cumin, paprika, salt, black pepper, and cayenne pepper. Cook for another 2 minutes.
  4. Lay out 8 flour tortillas. Divide chicken mixture evenly among them. Sprinkle with cheddar cheese. Roll up and place on a greased baking sheet.
  5. Bake in preheated oven for 15 minutes, or until lightly browned.
  6. Meanwhile, in a food processor or blender, combine avocado, sour cream, cilantro, green onion, and lime juice. Blend until smooth.
  7. Serve chimichangas with avocado sauce.
