Ingredients

  • 1/4 cup groundnut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Steamed white rice, for serving

Directions

  1. Heat the groundnut oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring often, until the onion is softened, about 5 minutes.
  2. Add the bell pepper and cook for another 2 minutes.
  3. Add the cayenne pepper, ginger, nutmeg, paprika, salt, and pepper and cook, stirring, until the vegetables are tender, about 5 minutes.
  4. Serve the shuku-shuku over steamed white rice.
