Ingredients

  • 1 cup oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup grated carrots
  • 1/2 cup oil
  • 1/2 cup milk
  • 1 egg

Directions

  1. Preheat oven to 375°F (190°C). Grease 12-cup muffin pan.
  2. In a large bowl, combine oats, flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Stir in grated carrots.
  3. In a small bowl, whisk together oil, milk and egg. Add to dry ingredients and stir until just combined.
  4. Divide batter evenly among the muffin cups. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  5. Let cool in pan for 5 minutes, then remove to a wire rack to cool completely.
