Easy Baked Chicken Tenders
Ingredients
1 cup oats
1 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup grated carrots
1/2 cup oil
1/2 cup milk
1 egg
Directions
Preheat oven to 375°F (190°C). Grease 12-cup muffin pan.
In a large bowl, combine oats, flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Stir in grated carrots.
In a small bowl, whisk together oil, milk and egg. Add to dry ingredients and stir until just combined.
Divide batter evenly among the muffin cups. Bake for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Let cool in pan for 5 minutes, then remove to a wire rack to cool completely.
