Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 8 cups chicken broth
  • 1/2 cup white wine
  • 2 cups cooked chicken, diced
  • 1/2 cup long-grain white rice
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and cook for about 5 minutes, or until softened.
  3. Add the garlic, thyme, and oregano and cook for an additional minute.
  4. Add the chicken broth and white wine, and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Add the chicken and rice, and simmer for an additional 10 minutes.
  7. Add the frozen peas and cook for an additional 5 minutes.
  8. Season with salt and pepper to taste.
