Ingredients

  • 3 cups of cooked corn
  • 1 red bell pepper, roasted and diced
  • 1/4 cup of red onion, thinly sliced
  • 2 tablespoons of olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 1 tablespoon of minced garlic
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Place the red bell pepper on a baking sheet and roast for 20 minutes.
  3. Once the pepper is roasted, remove from the oven and let cool before dicing into small pieces.
  4. In a large bowl, combine the roasted red pepper, cooked corn, red onion, olive oil, lemon juice, garlic, oregano, salt, and pepper.
  5. Toss to combine and serve.
