- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
- 1 pound boneless, skinless chicken breasts
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Add the carrots, celery, zucchini, and bell pepper and cook for an additional 5 minutes.
- Transfer the vegetables to a slow cooker. Add the diced tomatoes, oregano, basil, thyme, salt, pepper, and chicken broth. Stir to combine.
- Add the chicken breasts to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
- Serve the chicken and vegetables over cooked rice or quinoa.
