Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 pound boneless, skinless chicken breasts

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes. Add the carrots, celery, zucchini, and bell pepper and cook for an additional 5 minutes.
  2. Transfer the vegetables to a slow cooker. Add the diced tomatoes, oregano, basil, thyme, salt, pepper, and chicken broth. Stir to combine.
  3. Add the chicken breasts to the slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  4. Serve the chicken and vegetables over cooked rice or quinoa.
