Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 2 tart apples, peeled, cored, and chopped
- 2 ripe tomatoes, peeled, seeded, and chopped
- 1/2 cup white vinegar
- 1/2 cup packed light brown sugar
- Salt, to taste
Directions
- Heat the oil in a large saucepan over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the cumin, turmeric, coriander, ginger, cinnamon, and cayenne and cook for 1 minute.
- Add the apples, tomatoes, vinegar, sugar, and salt and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, until thickened, about 30 minutes.
- Let cool, then transfer to jars or other containers and refrigerate.
