Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 tart apples, peeled, cored, and chopped
  • 2 ripe tomatoes, peeled, seeded, and chopped
  • 1/2 cup white vinegar
  • 1/2 cup packed light brown sugar
  • Salt, to taste

Directions

  1. Heat the oil in a large saucepan over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the cumin, turmeric, coriander, ginger, cinnamon, and cayenne and cook for 1 minute.
  4. Add the apples, tomatoes, vinegar, sugar, and salt and bring to a boil.
  5. Reduce the heat to low and simmer, stirring occasionally, until thickened, about 30 minutes.
  6. Let cool, then transfer to jars or other containers and refrigerate.
