Ingredients
- 1/2 cup dry white wine
- 1/4 cup olive oil
- 1 leek, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 cups chicken broth
- 2 pounds boneless, skinless chicken thighs
- 1/4 cup leek soup mix
Directions
- In a large skillet over medium heat, heat the wine and olive oil. Add the leek and garlic and sauté until the leek is softened, about 5 minutes.
- Add the red pepper flakes, oregano, black pepper, and salt and cook for 1 minute.
- Transfer the mixture to a slow cooker. Add the chicken broth and chicken thighs and stir to combine.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 4-6 hours.
- After cooking, add the leek soup mix and stir to combine. Cover and let stand for 10 minutes before serving.
