Ingredients

  • 1 9-inch deep-dish pie crust
  • 1 can (14 ounces) sweetened condensed milk
  • 3/4 cup lemon juice
  • 2 tablespoons grated lemon zest
  • 1/4 teaspoon salt
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together the condensed milk, lemon juice, lemon zest, and salt. Pour into the prepared pie crust and bake for 15 minutes.
  3. In a large bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add the sugar, beating until stiff peaks form.
  4. Spread the meringue over the lemon filling and bake for an additional 15 minutes, or until the meringue is golden brown.
  5. Allow to cool before serving.
