Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 2 scoops vanilla protein powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 cup dark chocolate chips

Directions

  1. Preheat oven to 350F (175C).
  2. In a medium bowl, mix together the pumpkin puree, rolled oats, almond butter, maple syrup, protein powder, cinnamon, ginger, nutmeg, and allspice.
  3. Stir in the dark chocolate chips.
  4. Drop the cookie dough onto a lined baking sheet and bake for 12-15 minutes, or until golden-brown.
  5. Let the cookies cool before serving.
