Ingredients

  • 2 pounds boneless pork shoulder, cut into 2-inch cubes
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies
  • 1 pound fresh tomatillos, husks removed and chopped

Directions

  1. In a slow cooker, combine pork, onion, garlic, cumin, oregano, salt, pepper, tomatoes, green chilies and tomatillos. Stir to combine.
  2. Cover and cook on low for 8-10 hours, or until pork is tender.
  3. Serve with warm tortillas or over rice.
