Ingredients

  • 1 pound dried black-eyed peas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground black pepper
  • 6 cups chicken or vegetable broth
  • 4 strips bacon, diced
  • 1 bunch collard greens, washed and chopped
  • Salt and pepper to taste

Directions

  1. In a large slow cooker, add the black-eyed peas, onion, garlic, thyme, oregano, smoked paprika, cayenne pepper, and black pepper.
  2. Pour in the chicken or vegetable broth, and stir to combine.
  3. Cover and cook on low for 8 hours.
  4. In a large skillet over medium heat, cook the bacon until crisp.
  5. Add the cooked bacon and the collard greens to the slow cooker, and stir to combine.
  6. Cover and cook on low for an additional 2 hours.
  7. Season with salt and pepper to taste, and serve.
