In a large bowl, combine cabbage, carrots, chicken, pork, shrimp, mushrooms, water chestnuts, onion, bell pepper, garlic powder, ginger, black pepper, and soy sauce. Mix until evenly distributed.
Lay an egg roll wrapper on a flat surface. Place about 1/4 cup of the mixture in the center of the wrapper. Brush the edges of the wrapper with beaten egg.
Fold the corners of the wrapper over the filling and roll up tightly. Place the finished egg roll on a baking sheet.
Repeat with remaining wrappers and filling.
Bake in preheated oven for 20 minutes, or until egg rolls are golden brown.
