1 tablespoon olive oil
1 small onion, diced
1 bell pepper, diced
1/2 teaspoon garlic powder

Directions

Add the garlic powder, chili powder, oregano, and paprika and cook for an additional minute.
Season with salt and pepper to taste.
Add the cooked quinoa, black beans, and eggs and cook for 5 minutes, stirring occasionally.
Sprinkle with the cheese and cook for an additional minute.
Remove from the heat and divide the mixture between 4 bowls.
Top each bowl with the tomatoes, avocado, jalapenos, cilantro, sour cream, and salsa.
Serve immediately.
