Ingredients
- 1 gallon cold water
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1/4 cup fresh orange juice
- 1/4 cup fresh lemon juice
- 2 tablespoons black peppercorns

- 1/4 cup fresh grated ginger
- 2 bay leaves
- 1 large onion, sliced
Directions
- In a large pot, combine the water, salt, brown sugar, orange juice, lemon juice, peppercorns, thyme, ginger, bay leaves, and onion.
- Bring the mixture to a boil over medium-high heat, stirring to dissolve the salt and sugar.
- Remove the pot from the heat, cover, and let cool completely.
- Once cooled, add the brine to a non-reactive container.
- Add the turkey to the brine and refrigerate for 8-24 hours.
- When ready to cook, remove the turkey from the brine and rinse thoroughly.
- Pat the turkey dry and cook according to your desired recipe.
