Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes, (optional)
  • 1 (14-ounce) can diced tomatoes
  • 1/2 cup beef broth
  • 1 tablespoon tomato paste
  • 1 bay leaf

Directions

  1. Heat oil in a medium skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the ground beef, salt, pepper, Italian seasoning, and red pepper flakes, if using. Cook until the beef is browned, about 5 minutes.
  3. Transfer the beef mixture to a slow cooker. Add the tomatoes, broth, tomato paste, and bay leaf. Stir to combine.
  4. Cover and cook on low for 6 to 8 hours, or on high for 4 to 5 hours.
  5. Taste and adjust seasoning with salt and pepper, if desired.
  6. Serve over cooked pasta, potatoes, or rice.
