Optional: 1/2 teaspoon of sugar or 1 teaspoon of dashi powder
Directions
In a bowl, whisk together the eggs, mirin, soy sauce, oil and sugar (or dashi powder).
Heat a skillet over medium-low heat. Add a tablespoon of oil and spread it evenly. Pour a thin layer of the egg mixture into the skillet, making sure to coat the entire surface. When the edges of the omelette start to curl, use a spatula to roll the omelette into a log shape.
Add a little more oil to the pan and pour in more egg mixture. Spread the mixture over the pan and place the omelette log on top. Roll the log up and continue to add more egg mixture, rolling the log up each time.
When all the egg mixture is used up, your tamagoyaki is finished. Slice into pieces and serve while still warm.

Tamagoyaki is a popular street food in Japan, served as a part of bento boxes.
It is also sometimes referred to as tamago-yaki, tamagoyaki, or tamagoyaki-yaki.
