Ingredients

  • 1 tablespoon olive oil
  • 2 cups chopped vegetables of your choice (such as bell peppers, onions, mushrooms, and broccoli)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 3 eggs, lightly beaten
  • 2 tablespoons chopped fresh herbs of your choice
  • ¼ cup shredded cheese of your choice

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add vegetables and cook for 5 minutes, stirring frequently.
  3. Add garlic powder and salt. Cook for an additional 2 minutes.
  4. In a medium bowl, whisk together eggs, herbs, and cheese. Pour into the skillet and stir to combine.
  5. Transfer mixture to an 8x8 inch baking dish. Bake for 15 minutes, or until eggs are set.
  6. Serve warm.
