3-Cheese Spaghetti Squash

Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • Salt and freshly ground black pepper, to taste

Directions

  1. Preheat oven to 400 degrees F.
  2. Brush the cut sides of the spaghetti squash with olive oil.
  3. Place the squash cut side down on a baking sheet and bake for 30 minutes, or until tender.
  4. Remove the squash from the oven and let cool slightly.
  5. Using a fork, scrape the inside of the squash to remove the spaghetti-like strands.
  6. Place the strands in a bowl and toss with the Parmesan cheese, mozzarella cheese, and feta cheese.
  7. Season with salt and black pepper, to taste.
  8. Serve warm.
