Fried Green Tomatoes with Shrimp Remoulade

Ingredients

  • 4 green tomatoes, sliced 1/4-inch thick
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons Creole mustard
  • 2 tablespoons ketchup
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon hot sauce
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon chopped fresh parsley
  • 1/2 pound cooked shrimp, peeled and deveined

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. In a shallow dish, combine the flour, eggs, panko, garlic powder, cayenne pepper, paprika, salt and pepper.
  3. Dip the tomato slices in the flour mixture, coating both sides.
  4. Carefully place the coated tomato slices in the hot oil and cook until golden brown, about 2 minutes per side.
  5. Remove the tomatoes from the pan and drain on a paper towel-lined plate.
  6. In a small bowl, mix together the mayonnaise, mustard, ketchup, Worcestershire sauce, hot sauce, garlic powder, cayenne pepper and parsley.
  7. Stir in the cooked shrimp.
  8. Serve the fried green tomatoes with the shrimp remoulade.
