Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoon butter
  • 3 ripe bananas
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda, and salt. Set aside.
  3. In a medium bowl, cream together butter and honey. Mash the bananas into the mixture.
  4. Stir the banana mixture into the flour mixture until just blended. Stir in vanilla extract and walnuts (optional).
  5. Pour batter into prepared pan.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Let cool in pan for 10 minutes, then turn out onto a wire rack.
