Ingredients

  • 2 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped cilantro
  • 1/4 cup fresh lime juice
  • 1/4 cup chicken broth

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the shrimp and season with the garlic powder, cumin, chili powder, smoked paprika, cayenne pepper, salt and black pepper.
  3. Cook the shrimp for 2-3 minutes, or until they are pink and cooked through.
  4. Remove the shrimp from the skillet and set aside.
  5. Add the tomatoes, onion, garlic, cilantro, lime juice and chicken broth to the skillet.
  6. Simmer for 2-3 minutes, or until the sauce has thickened.
  7. Return the shrimp to the skillet and toss to coat in the sauce.
  8. Serve warm with a side of rice or tortillas.
