Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup low-calorie sweetener
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsweetened almond milk
  • 1/4 cup rolled oats
  • 1/4 cup dark chocolate chips

Directions

  1. In a medium bowl, mix together the peanut butter, sweetener, vanilla extract, baking soda, and ground cinnamon until combined.
  2. Add in the almond milk and stir until the mixture is creamy and smooth.
  3. Fold in the rolled oats and dark chocolate chips.
  4. Line a baking sheet with parchment paper.
  5. Using a tablespoon, drop tablespoon-sized balls of the cookie dough onto the baking sheet.
  6. Bake at 350°F for 10-12 minutes, or until the edges are lightly browned.
  7. Allow the cookies to cool completely before serving.
