Ingredients

  • 3 eggs
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/2 cup of butter, melted
  • 2 cups of all-purpose flour
  • 2 teaspoons of baking powder

Directions

  1. In a medium bowl, whisk together the eggs, sugar, and vanilla extract until light and fluffy.
  2. Add the melted butter to the egg mixture and whisk until combined.
  3. In a separate bowl, sift together the flour and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Heat a pizzelle iron to medium-high heat. Grease lightly with butter or non-stick cooking spray.
  6. Drop a tablespoon of batter into the center of the pizzelle iron and close the lid. Bake for 45-60 seconds, or until golden brown.
  7. Remove the pizzelle from the iron and transfer to a wire rack to cool. Serve warm or at room temperature.
