Ingredients

  • 2 cans (14.5 ounces each) diced tomatoes
  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup half-and-half

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onions and sauté for about 5 minutes, until softened.
  3. Add the garlic and sauté for 1 minute more.
  4. Add the canned tomatoes, sugar, basil, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 15 minutes.
  6. Remove from heat and let cool for a few minutes.
  7. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender or food processor and blend until smooth.
  8. Stir in the half-and-half and let the soup heat through.
  9. Taste and adjust seasoning if needed.
  10. Serve hot with desired toppings.
