Ingredients

  • 1 (3-4 pound) chuck roast
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the roast to the skillet and brown on all sides, about 3 minutes per side.
  2. Transfer the roast to the slow cooker. Add the onion, garlic, oregano, thyme, rosemary, salt, and pepper to the slow cooker.
