Directions
- In a medium bowl, whisk together the flour, baking powder, and salt. Add the oil and stir until the flour is crumbly. Add the water and stir until a smooth dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.
- Divide the dough into 8 equal pieces and roll each piece into a thin circle, about 5 to 6 inches in diameter.
- Mix the chopped mint, cumin, coriander, garlic powder, and cayenne pepper in a small bowl. Brush each flatbread with the olive oil and sprinkle with the spice mixture.
- Heat a large skillet over medium-high heat. Place the flatbreads in the skillet, one at a time, and cook for 2 to 3 minutes per side, until golden brown and crispy.
