Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/2 cup warm water
  • 1 tablespoon finely chopped fresh mint leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Directions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Add the oil and stir until the flour is crumbly. Add the water and stir until a smooth dough forms.
  2. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until the dough is smooth and elastic. Cover with a damp cloth and let rest for 10 minutes.
  3. Divide the dough into 8 equal pieces and roll each piece into a thin circle, about 5 to 6 inches in diameter.
  4. Mix the chopped mint, cumin, coriander, garlic powder, and cayenne pepper in a small bowl. Brush each flatbread with the olive oil and sprinkle with the spice mixture.
  5. Heat a large skillet over medium-high heat. Place the flatbreads in the skillet, one at a time, and cook for 2 to 3 minutes per side, until golden brown and crispy.
  6. Serve warm.
